Make your Dressing

You will need - - equal parts of

Fresh Lemon Juice - 1part

Good balsamic vinegar 1part

Extra Virgin Olive Oil 2 parts

Fresh finely chopped Garlic 2-5 Cloves - they provide a delicious heat and flavor,

a pinch of salt

Ground Black Pepper to taste

1 teaspoon of raw sugar ( or Honey) to balance the acidity.

Method Mix well, drizzle over warm roasted vegetables, baby spinach.

Will keep well in the fridge.

1 Avocado (chop 1/2 & mash 1/2)

1 cup of finely chopped baby spinach (optional)

Dressing

Mix the avocado and dressing together a little at a time until you get the consistency you require,

You can also put it into a food processor,
